Ascorbate peroxidase (APX) catalyzes the reduction of H₂O₂ using ascorbate (vitamin C) as the electron donor, playing a crucial role in plant antioxidant defense against oxidative stress induced by drought, salinity, heat, and pathogen attack. The kit measures the decrease in ascorbate absorbance at 290 nm as APX consumes ascorbate during H₂O₂ reduction. Activity is expressed as nmol ascorbate oxidized/min/mg protein.
