The ORAC assay measures the inhibition of peroxyl-radical-induced oxidative degradation of a fluorescent probe (fluorescein). The area under the fluorescence decay curve (AUC) reflects the antioxidant protection capacity of the sample, expressed as Trolox equivalents (TE).
